At 3201 Bee Caves Road there's a row of exterior lockers that nobody is filling. A short way up the road, at 3300 Bee Caves Road, a pizza counter that used to hold twelve people at a time is closed behind construction. When it reopens it's projected to seat fifty-four.
Both are on the same short stretch of Bee Caves Road, where a quick dinner is easy to pick up on the way home. Between August and September, the two restaurants made opposite bets about what a meal on this block should look like. One left. The other is spending a season closed so it can add chairs.
Three years of lockers at 3201
Whataburger chose this block for an experiment. On Sept. 5, 2023, the chain opened its first fully digital location, Whataburger Digital Kitchen, at 3201 Bee Caves Road, Suite 180. You ordered online, in the app, or at a self-service kiosk on site, and picked up your food from exterior lockers. Community Impact's opening report noted there was no traditional seating, no curbside pickup, and no drive-thru.
That was the whole idea. The building did one thing, which was hand over a bag, and it did it without a dining room or a drive-thru lane. The address sits in West Woods Shopping Center, the same center as the Michaels at Suite 112.
In September 2026, three years after opening, the location closed. A Whataburger spokesperson told Community Impact that the company regularly reviews its locations "to maximize opportunities for growth," and that sometimes this means closing one. In the spokesperson's words, "This decision helps focus our efforts where we can make the biggest impact." The chain still runs more than 1,200 locations nationwide, many of them in and around Austin.
That headline places the closure in "Bee Cave," but the listed address is 3201 Bee Caves Road, Austin. As of Oct. 8, no replacement tenant had been reported for Suite 180.
Twelve seats, then fifty-four
Baldinucci Pizza Romana runs the other way. Salvatore, Patricia, and Gabriel Baldinucci opened the family restaurant in October 2022 at 3300 Bee Caves Road, Suite 110. Eater Austin's opening-week coverage listed the first day as Tuesday, Oct. 18, 2022. Community Impact placed Westbank Shopping Center at the 3300 address in a 2019 story.
The menu is built around Roman-style pizza by the slice, with margherita, sausage and honey, chicken parmesan, and fig and arugula. There are also house, caesar, and greek salads, New York hero sandwiches, meatball parmigiana, and desserts like New York cheesecake with strawberry compote, limoncello mascarpone cake, and cannoli. Until this summer, all of that came out of a room with twelve seats.
On Aug. 10, the flagship closed for renovations. According to a news release reported by Community Impact, it's slated to reopen in November with a dining room that grows from 12 seats to 54. That's 42 added seats, or four and a half times the old capacity, at a restaurant that had been open less than four years when it closed for the work.
Side by side, the two addresses look like this:
| Whataburger Digital Kitchen | Baldinucci Pizza Romana flagship | |
|---|---|---|
| Address | 3201 Bee Caves Road, Ste. 180 | 3300 Bee Caves Road, Ste. 110 |
| Opened | Sept. 5, 2023 | October 2022 |
| How you got your food | Online, app, or kiosk order; exterior locker pickup | Counter and dining room |
| Dining room | None | 12 seats before renovation |
| Status as of Oct. 11, 2026 | Closed in September 2026 | Closed since Aug. 10 for renovation |
| What's next | No replacement tenant reported | Projected November reopening with 54 seats |
The release didn't say why the family is expanding the room, and there's been no reopening-day announcement yet. The projection is still the one published in August. A restaurant that could have stayed open as a slice counter chose to go dark for about three months to build a real dining room on this block.
Where the slice went in the meantime
The Baldinucci family didn't just close the flagship and wait. A week after the Westlake location shut, a second Baldinucci opened at Domain Northside on Aug. 17. According to the release, it "will serve as a hub for both longtime fans and new guests" until the Bee Caves Road room reopens.
For anyone west of MoPac, Domain Northside is a real drive for a slice. If you're staying closer to home, farther out Bee Cave Road there's Taqueria de Diez, which opened its West Lake Hills location this spring at 3736 Bee Cave Road, Suite 2.
Some of the block's other tenants have been there for years. Community Impact's October business roundup lists the Restore Hyper Wellness at 3276 Bee Cave Road, Suite 118, as one of two area Restore locations marking five- and ten-year anniversaries this month. The turnover at 3201 and the construction at 3300 are happening alongside storefronts that have stayed put.
The December question at 3231
Next up is a newcomer between the two. Teriyaki Madness is planning a location at 3231 Bee Caves Road. As of Community Impact's Sept. 4 report, it was still in permitting, and a company representative gave a tentative early-December opening. The outlet's Sept. 7 roundup repeated that status, and nothing newer had been reported by mid-October.
Neither report says how many seats the Teriyaki Madness space will have, or whether it will lean toward takeout. So the block's direction rests on two open questions, both a few doors apart. One is what Teriyaki Madness builds at 3231. The other is who signs a lease for the empty Suite 180 at 3201, a space that was set up for locker pickup.
Over three years the block hosted a restaurant built for pickup only, with no dining room or drive-thru, and that format is gone. The restaurant that's investing in the block right now is putting its money into chairs.
The block's calendar through December
The dates below come from public reports and the City of Rollingwood's calendar. The two restaurant dates are projections, and either one could change.
- Oct. 31, 4 p.m. Rollingwood's Trunk-or-Treat at Rollingwood Upper Park, 3111 Gentry Drive, a few minutes from the Bee Caves Road storefronts, according to the city calendar.
- Nov. 1, 5:30 to 8:15 p.m. Eanes Elementary Movie Night at Rollingwood Pavilion, 403 Nixon Drive, listed on the city's November calendar.
- November, projected. Baldinucci Pizza Romana reopens at 3300 Bee Caves Road with 54 seats.
- Early December, tentative. Teriyaki Madness opens at 3231 Bee Caves Road, if permitting stays on schedule.
- No date. A new tenant for 3201 Bee Caves Road, Suite 180, where Whataburger's lockers used to be.
Changes like these, a café adding seats or a storefront that stays empty, are the block-by-block detail we follow across Westlake and Rollingwood. If you're thinking about how your corner of 78746 is changing, the Kathryn Scarborough Group would be glad to compare notes. Contact us anytime.
